SAIGONDAN Coffee Tasting Guide: Discover the Art of Coffee Cupping

Understanding Coffee Flavors

Coffee is one of the most chemically complex foods we consume, containing 2 to 3 times as many flavor compounds as wine. The tasting notes on our bags are carefully chosen to highlight the subtle aromas and flavors that emerge during tasting. These notes correspond to actual flavor compounds found in the foods they remind us of, such as chocolate or green apple.

The Art of Coffee Cupping

Coffee cupping is a standardized method used by coffee professionals to evaluate the quality and flavor profile of coffee beans. Here’s how you can conduct a cupping session at home to explore SaigonDan coffees:

1. Preparation

Equipment:

  • Freshly ground coffee (use a medium-coarse grind)
  • Hot water (around 200°F or 93°C)
  • Cupping bowls or any small bowls
  • Cupping spoons or regular soup spoons
  • Scale for precise measurement
  • Timer

Procedure:

  1. Measure out 12 grams of coffee for each cup.
  2. Place the ground coffee into each cupping bowl.
  3. Smell the dry grounds to note the initial aromas.

2. Brewing

Procedure:

  1. Pour 200 grams of hot water (200°F or 93°C) over the grounds in each bowl.
  2. Let the coffee steep for 4 minutes.

3. Tasting
